Our Tanager expression mixes the Brazilian Souths two favorite woods. We age this cachaa in barrels of oak and ararib (zebrawood), a traditional Southern wood that adds natural red color and a distinctive mountain earthiness. We sourced the wood from our only two zebrawood barrels from an abandoned house located on a friends property. Tanager is spicy, oily, and funky and makes a powerful base for an exotic Sazerac cocktail.

TANGERAC

2 oz Novo Fogo Tanager Cachaa
2 dashes of Scrappys Orleans bitters
2 dashes of Angostura bitters
0.25 oz simple syrup

Stir with ice and strain into an Absinthe-rinsed glass. Zest lemon on the size of the glass and discard the peel.

Cachaa is Brazils national distilled spirit made from freshly-pressed sugarcane juice. Cachaa is 500 years old; it is an older spirit and larger category than rum. Since its distilled from a fresh plant, terroir matters. The terroir of the coastal Atlantic Rainforest makes Novo Fogo cachaa unique.

Our home is a little town called Morretes (Mo-HEH-tes), in the middle of the largest patch of protected jungle in southern Brazil. The air is clean and fragrant with tropical fruits, flowers, and the salty sea breeze. Our healthy, estate-grown sugarcane reflects this pure rainforest environment, which is why we process the cane minimally to preserve its flavor.
