This appellation, created in 2017 to highlight fruit sourced exclusively from the Cte dOrs most privileged slopes, draws from vineyards near Pommard and Volnay, where the terroir gives the wine more structure and character than typical regional bottlings.
The vines grow on classic Burgundian soils of clay-limestone with scattered marl and small pebbles, benefiting from excellent drainage and a sun-catching east to southeast exposure. The combination of mineral-rich soils, moderate slope, and careful vineyard management encourages naturally limited yields, producing grapes with concentration, aromatic depth, and fine tannins. In 2022, a warm yet balanced growing season allowed for full ripeness while preserving the freshness essential to Pinot Noir from this part of Burgundy.
Joillot farms sustainably, following lutte raisonne principles, with canopy work and green harvesting as needed to maintain even ripening and protect fruit quality. Grapes are hand-harvested, fully destemmed, and given a short cold soak before fermentation with native yeasts in stainless steel vats. Gentle punch-downs and pump-overs encourage a soft extraction, keeping the wine supple and fruit-forward. After fermentation, the wine is matured for 1012 months in older French oak barrels to add subtle texture without overwhelming its bright, varietal character.
