Sherry-seasoned oak casks define The Glenrothes single malt Scotch whisky. Almost 90% of casks maturing at our Speyside distillery have previously held sherry, a wine made from white grapes grown near the city of Jerez de la Frontera in Andalusia, Spain. The Soleo Collection pays homage to the origin of whisky making by celebrating the flavoursome stages of the grapes evolution. Soleo is the traditional sun drying process which creates the foundation for crafting the finest sherry. The grapes are placed under the heat of the Andalusian sun, as they absorb the energy, they change from bright green and yellow to deep purple signaling the perfect moment for fermentation.
