Vineyards:Sandy soils (our vineyards from San Juan del Monte, with more than 60 years old) from Ribera del Duero.

Maceration:cold maceration for 7 days at 8C.

Alcoholic Fermentation:for 5 days at 28C with autochthonous yeasts.

Malolactic Fermentation:In brand American Oak.

Ageing:9 months in brand American and French oak barrels. Barrels of 400 and 500 litres with medium toasted.
Analysis:
Alcohol content: 15% Vol.
Acidity: 4,77 g/l.
Sugar content: < 2 g/l. pH: 3,75. Filtration:Light.
