This is a standout wine with great acidity. This wine has floral notes of violets and hints of baking spices. It has both red and blue fruit and has very elegant tannins. The 10% Malbec in the blend helps tone down the pyrazines from the Cabernet Franc, making is a rounder and more pleasurable wine that would pair very well with an Argentinian steak.
Vineyard: Gualtallary, Tupungato.
Altitude: 4,822 ft
Type of Soil: Deep-calcareous, rocky soil.
Vinification: Wild yeast, max. temperature 28C / 82F for 22 days, with 28 days of maceration. 5 different harvest times (5 weeks between the first and the last one).
Aging: 15 months in 100-year-old foudre.
