Forget what you think you know about Moscato, this is a very special wine. Loosely translated, “Aesta Sicilae” means something like “Sicilian summer”. Late harvested, this Moscato is fermented on the skins for added structure, and aged in stainless steel to preserve freshness and its fruity character. Richly textured with a mouthwatering saline-forward minerality and acidity. There is sweetness, and fruit, but it is buttressed by driving acidity. Aged it if youcan keep your hands off, however now it will pair excellently with cheeses or fruit desserts.
