We propose a “Zen” version of multiple cuves, with no added sulfur until bottling. For these wines, the total added sulfur is around 20 mg/l. Only few bottles “Zen” are produced (900 to 1,500 bottles for each) Walk, listen, smell. You are in the middle of the plowed La Soufrandire vineyard of Pouilly-Vinzelles Climat Les Quarts, on a terroir that we think is one of the best in Burgundy. Maybe were biased by our endless love for it, or maybe its because we just know it deep down. The pinnacle, an old shelter with a roof covered in varnished tiles, stands like a guardian. The earth here is soft, aerated, perfumed. It is alive. The soul of the terroir is undeniably present. With an almost magical exposure at the top of a southeast-facing slope, our oldest Chardonnay vines (52 to 85+ years old) are rooted in an active limestone and clay soil (Bajocian, rich with siliceous crystals), giving birth to powerful, age-worthy wines. The nose is citrusy and mineral, and the balanced palate shows complexity and a long finish. As vintages go by, the terroir remains; its up to us to preserve it! The typical tension and structure in this wine makes this a truly great Burgundy!

• Size: 2.00 ha (4.94 ac)
• Vine Age: Planted from the mid-1930s to 1970
• Terroir: Highest and stoniest part of slope, southeastern exposition, Bajocian soil with siliceous crystals.
• Viticulture: Organic (Ecocert) and biodynamic (Demeter, 2006)
• Vinification: Pressed with whole clusters, ambient yeast fermentation. Aged 11-18 months in 228L used oak barrels and another 6 months in tanks. Bottled both as a classic cuve with 40-50 mg/L added SO2 and as a “Zen” cuve with only 10-20 mg/l added SO2.
