The roots of the Tenuta del Pajaru estate are deeply embedded in the history and symbols of Puglia. A Pajaru is a rural drystone building used as a shelter by farmers and shepherds. Only a skilled artisan called a Paritaru possessed the wisdom and expertise required to build these huts. Even today, the pajaru is an emblem of knowledge and experience, which are the same expertise required to produce a great wine.
That wisdom has over the years become art in winemaking and results in a unique wine with an intense red colour with violet reflections. A full nose of black currant, blackberry and jam that we find then in the mouth accompanied by hints of black chocolate and a spicy finish. Excellent with aged cheeses, white and red meats. This wine is Vegan.
