Winery: Llum translates to ‘the light’ in Catalanese. A blend of Grenache Gris and Macabeu planted between 1919 and 2008 in schist. The Very Shallow Schist (No Clay) Soils Give Llum A Crystalline, Mineral-Laced Character.
Tasting Note: The wine slowly reveals intense complex fruits and an intense minerality. Incredibly flavorful with a broad acidity and medium body, this is a truly refreshing wine.

• Winemaking: Whole-cluster pressing. Settling without cooling. Ambient yeast fermentation with no sulfur additions in 500L barrels, mostly used. No fining. Light filtration. Total sulfur at bottling 40 to 60 ppm, though it is not all added because the yeasts in the terroir produce a substantial amount on their own during fermentation.
