VINIFICATION Harvested entirely by hand. Immediately pressed using low pressure in a pneumatic press. Cleared by chilling. Fermented in a temperate controlled environment in stainless steel vats. Made using the traditional method, with a second fermentation in the bottle to allow the effervescence to develop. The bottles are kept in special crates, (lattes) for one year in temperature controlled cellars

DEGUSTATION This blanquette has a robe reminiscent of a yellow butterfly. There is a constant stream of numerous, fine, white bubbles. The intensity of the flavour develops with the release of the bubbles and gives notes of floral essence; hawthorn and acacia. A gentle hint of minerals adds to the complexity! After the initial agreeable assault on the mouth, we discover a harmonious mixture of lemon and pink grapefruit with a finale of hazelnut. This is a beautifully balanced wine. A perfect accompaniment to monkfish in lemon sauce, or for an aperitif with food.
