Cepage: 75% Pinot Meunier, 25% Pinot Noir

Viticulture: Biodynamically farmed Pinot Meunier and Pinot Noir. All hand-harvested

Vinification: Vinified in oak barrels, many of which are made from trees from the forest of Fossoy. No malo, unfined and unfiltered.

Aging: Aged in oak barrels and then sur lattes in bottle for 24-30 months. Unfined and unfiltered; disgorged

The NV (2020) Extra Brut Ros Cuve Initiation is airy, ethereal and quite gracious in feel, consisting of 60% Pinot Noir and 40% Pinot Meunier from various parcels in Fossoy (including 7% Coteaux Champenois Rouge from Rue des Noyers). Dried herbs, flowers, mint, spice and cranberry are nicely delineated. Vibrant, brisk acids round things out in style, but this comes across as a bit vegetal. This wine saw ten months of aging on its lees in 228L oak barrels. Bottled with no dosage. Disgorged: December, 19. 2022. A.G 11/2023
