This premium spirit is derived from the wild maguey Penca Ancha (Agave cupreata). The production process involves cooking the agaves in a subterranean oven, followed by milling with a mechanical shredder. Fermentation occurs in open-air plastic barrels, and the mezcal undergoes a double distillation in a unique still. This still comprises a hollowed higuera blanca tree trunk positioned over a copper pot, an innovative approach to distillation.
